EASY AMERICAN STYLE PANCAKES

This morning, I woke up with an inconsolable craving for pancakes - the thick and gloriously spongy kind associated with American breakfasts. Thankfully, when I raided my cupboards I found the right ingredients. 

I served mine with honey and fresh berries, which was later followed by a huge helping of Nutella when I went back for seconds. I can imagine them tasting really nice when paired with bananas and almonds, too. 

RECIPE: 

Ingredients (Serves 2)
1 cup of self-raising flour
1 free range egg
1 cup of almond milk 
1 table spoon of brown sugar
1 pinch of sea salt 
1 portion of butter 

Runny honey, raspberries and strawberries; to serve. 

Method
Add the flour, almond milk, egg, salt and sugar into the bowl (basically everything other than the butter and serving ingredients). Beat until smooth. 

Heat the portion of butter on a medium heat and wait for it to melt. 

Add the batter into your pan. I found that it was easier to pour the batter from the bowl into a mug and then pour the mix directly from that. 

Heat for two minutes or so on each side, flipping until they have cooked to a golden brown. 

Once cooked, add your choice of toppings!

So easy even I can't make a mess of it!
