This 'Super food Rice' recipe combines the best of both worlds - delicious and packed full of essential nutrients. It's a cupboard 'oh crap, I really need to do a food shop' savior; ingredients are easily swapped out and interchanged with whatever you have laying in your kitchen. Use the recipe for inspiration, or, follow it to the T. It's up to you! 


1 Cup of Brown Rice
1/2 an Avocado
1/2 cup of Runner Beans (diced vertically)
2 Spring Onions
1 Raw Pepper 9 (great for adding texture)
A couple of Broccoli Florets
A sprinkle of Pine Nuts

2 Teaspoons of Honey
4 Tea Spoons of Soy Sauce (light or dark)
A pinch of Salt
A pinch of Black Pepper
1 Teaspoon of Paprika Powder
1 Teaspoon of Mixed herbs
2 Teaspoons of hot water


Boil the brown rice.

Whilst the brown rice is cooking, cut up your veg (avocado, spring onion and pepper) and begin to boil the broccoli and runner beans.

Mix the sauce ingredients together, adding extra/less amounts to suit your taste. 

Once the rice and veg are boiled, drain the excess water. 

Mix all ingredients, including the sauce and pine nuts into a bowl. 

- Voila!
